MPM: Calling All Fish Recipes :)


Here's my plan for this week. We missed one meal last week that I was really looking forward to trying...so it's back on the list for Thursday. I'm always working towards healthier eating so I'm trying to incorporate fish at least once a week (any good recipe recommendations?), vegetarian at least once a week, and lots of veggies and fruit.

MONDAY - Grilled Cheese, Tomato Soup, Carrot Sticks, Yogurt (just the kids and me)
TUESDAY - Balsmaic-Glazed Salmon, Couscous, Steamed Broccoli & Cauliflower
WEDNESDAY - Southfork Chili, Cornbread, Mixed Green Salad w/vinaigrette
THURSDAY - Slow Cooker Italian Chicken, Green Beans w/olive oil & garlic, Fruit
FRIDAY - Spaghetti & Meatballs, Homemade Breadsticks, Mixed Green Salad
SATURDAY - Pizza, Veggies, Fruit Slices
SUNDAY - Eggs, Bacon, Yogurt (this may change)

  2. I tried the slow cooker chicken last week. It was really good except that the chicken was a bit dry. I then was reading one of my crock pot cookbooks and they said you should put the chicken in frozen so that it cooks slower. I also thought if I used thigh meat instead of breast it might be moister too. Thanks for posting your recipes, it really gives me some good ideas.

  3. Hey Paula, I'm thinking I might add a little chicken stock to make sure it isn't too dry. I do often put mine in frozen and it works great. Thanks for the input!

  4. Sorry, I'm not great at fish. Whenever I try it comes our really dry, so I've basically stopped trying. But whenever I go out to eat, I like to get fish then:) Helpful, huh?
