Menu Plan Monday: Thanksgiving Week

The roast last week was AMAZING! It was the best roast we have ever had - so I highly recommend that recipe! I didn't have time to make the rice and it was great by itself!

Monday - Spaghetti & Meatballs, green beans, garlic bread
Tuesday - Pancakes, bacon, fruit
Wednesday - Pizza, veggies & dip, fruit
Thursday - Thanksgiving at my parents - I will be taking pies
Friday - Tomato soup & grilled cheese, apples
Saturday - Leftovers
Sunday - Apple Ham Bake, mixed green salad

This week is a little up in the air for us - especially Friday and Saturday so I've made some tentative plans. I will be out getting my hair done Tuesday night so Andrew will be making dinner - his favorite thing to make is breakfast for dinner! I have an over abundance of pasta :), so we will be having spaghetti. I'm planning to make my own sauce but don't have a particular recipe - I'll probably just make one up. :) Sorry there aren't many recipes this week - the only new recipe is the apple ham bake. I'm continuing to add to my recipe blog when I get a chance! Check out Laura's blog for lots more menus!

I have an "adapted" Speghetti & Meatball recipe from All Recipes that we really like, and it's so easy. Maybe you'll have a chance to try it some time. Here's the recipe:

Meatballs:
1 lb ground beef
1/2 C Italian bread crumbs
1 T dried parsley
1/2 C grated parmesan cheese
1/4 t black pepper
1/8 t garlic powder
2 eggs, beaten

Sauce:
3/4 C chopped onion
5 cloves garlic, minced
1/4 C olive oil
2 (28oz) cans whole peeled tomatoes (I've used fresh and they are really good too!)
2 t salt
1 t sugar
1 bay leaf
1 (6oz) can tomato paste
3/4 t dried basil
1/2 t pepper

Directions:
In a large bowl, combine ground beef, bread crumbs, parsley, parmesan, 1/4 t pepper, garlic powder, and eggs. Mix well and form into balls. Store until needed.

In a large saucepan over medium heat, saute onion and garlic in olive oil until onion is translucent. Stir in tomatoes, salt, sugar, and bay leaf. Cover. Reduce heat to low and simmer 90 minutes. Stir in tomato paste, basil, 1/2 t pepper and meatballs and simmer 30 minutes more. Enjoy!
