Making-Myself-Menu-Plan


I'm feeling fairly uninspired this week and I'm definitely exhausted from all of our celebrations over the past weekend (4 in 3 days). I'm making myself menu plan tonight because I know I'll regret it if I don't!

We ended up not eating the Apple Ham Bake - we had brunch with my sister and brother-in-law instead which was great! So, I'm adding that back in for this week. We have an abundance of sweet potatoes from my in-laws so I'm planning a number of recipes that include them over the next few weeks! :)

Monday - Sweet Potato Lentil Stew (crockpot), Biscuits
Tuesday - Irish Colcannon (this is from a couple of weeks ago), Salad, Bread
Wednesday - Apple Ham Bake, Peas
Thursday - Spaghetti & Meatballs, Garlic Bread, Salad, Fruit
Friday - Pizza, Apple Slices, Chips
Saturday (Tree Trimming Party) - Crackers & Cheese, BBQ Cocktail Sausages, Veggies & Dip, Cookies, Hot Chocolate, Punch, and probably a few other snacky things
Sunday - Peach Stuffed French Toast, Bacon

Most of the main dishes this week are new recipes (okay, so I guess since I'm not feeling inspired, I must be feeling adventerous :)). Monday and Tuesday are vegetarian dishes. I'll be making my own spaghetti sauce - recipe is from my good friend Micah! What are you having this week? Feel free to check out my recipe blog - I hope to add some holiday recipes this week. We're having pizza this week too. I was also feeling uninspired tonight. Oh well...just trying to work with what we have this week. Have a good one!

Question about the Sweet Potato Lentil Stew- is it soupy/liquidy when it is done or is it more like a potato type thicker soup? Looks good to me and I'd like to try it.

A few people have called me or commented to me today about your recipes. I reassured them that all the ones I have made have been delicious.

Monica, It's pretty thick - definitely not really soupy by the end of cooking. I'm going to change a few more things - 1 - 1 1/2 tsp. cumin, 1/2 tsp. ginger, and 1-2 tsp. salt. I also topped it with shredded monterey jack cheese. It was good - Andrew loved it, I really liked it, the boys ate it. :)

Thanks for the vote of confidence on the recipes! I really do love cooking and finding the right recipes (or developing my own) is so fun - it's even more rewarding that other people are enjoying them!
