LOADED CHOCOLATE CHIP COOKIES
1 cup (2 sticks) butter
3/4 c. packed brown sugar
3/4 c. sugar
1 tsp. vanilla extract
2 eggs
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. semi-sweet chocolate chips
1 c. milk chocolate chips
3/4 c. toasted coconut
3/4 c. toasted pecans, chopped
Heat oven to 375 degrees F. Beat butter, sugars, and vanilla mixer until creamy. Add eggs; beat well. Stir together dry ingredients and gradually add to butter mixture. Stir in chocolate chips, coconut, and pecans.
Drop by tablespoonfuls on ungreased cookie sheet (I use a stone). Bake 10-12 minutes until lightly browned. Cool slightly and remove to wire cooling rack.
Makes 4 dozen medium sized cookies.

Hey! I keep meaning to participate in your Thursday posts but keep forgetting or run out of time to blog!! I will definitely try these cookies--they look like a combo of Chocolate Chip and Cowboy Cookies. Yum!
