Lentils


The Carrot Lentil Casserole was a success (I do not have a picture of it) - Andrew thought it was great and said he would eat it every week, my brother, Noah, had seconds, and the boys both ate it! We usually love lentils and have a couple of recipes that are really good. Here's the recipe from yesterday - it is from Fix-It and Forget-It Lightly (compiled by Phyllis Pellman Good) but I changed a few things so I'm posting this with my changes. By the way, it was really easy to put together and Andrew had it for lunch and said it was great leftover.

Carrot Lentil Casserole

1 lg. onion, chopped
1 c. carrots, finely chopped (I did just a little more)
3/4 c. dry lentils
3/4 c. brown rice, uncooked
1/2 c. green pepper (I just added a whole small one)
1/2 tsp. dried thyme
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. sage
1/4 tsp. garlic powder
1 can (14 oz.) diced tomatoes, undrained*
1 1/2 c. chicken broth or vegetable broth*
1/2 - 3/4 c. shredded cheese (I used an Italian 4 cheese blend but you could use whatever you
like)

Combine all ingredients except cheese in a slow cooker.
Cover and cook on high 4-5 hours. (It took 5 hrs. in my crockpot.)
Just before serving, stir in cheese until melted.

*Original recipe called for 1 c. tomatoes & 1 c. broth - this didn't seem like enough to me so I added more - it definitely needed it.

Mmm. That sounds good. I presume this was the main dish? I don't have a whole lot of meatless main dishes that are good-tasting. Plus, Kevin always looks at me with eyebrows raised when I try to serve him meatless. He's a meat guy. But maybe the beans will be enough protein for him. :)

I'd love to see your other lentil dishes, if you are willing to share. Also, I think you owe me a tart recipe. Hint, hint. :)

You are so right about the tart recipe, Amy! I completely forgot -thanks for the reminder!

I'll post or send a couple more lentil recipes that we really like - at least one of them has meat in it also. :) Yes, it was our main dish. You'll have to post your menus sometime - I'd love to see what you're making.

I do enjoy menu planning and I really like not having to plan what we are going to have at 5:30 every day and then not having the right ingredients. :)

What kind of lentils did you use? Do you think it would matter which kind is used?

I'm going to give this one a try.

My family will eat lentils one way or another:)
