What's Cooking This Week!


This week is a little different than normal - it's a week of celebration! Thursday is our 1st Gotcha Day - the adoption of our two sons was final on Oct. 4, 2006 in Kazakhstan! Andrew is taking at least 1/2 the day off and we will be celebrating their birthday into our family with a fun day! It's also two of my sisters birthdays (born on the same day 7 years apart) so we will be getting together with my family for a birthday dinner Sunday. And since that brings my youngest sister home from college, we will be hosting dinner Saturday night for 4 of my siblings and their spouses/significant others. We will also be visiting my in-laws either Tuesday or Wednesday evening for dinner. I can't wait for this week to get started!
Here's my menu plan for this week:
Monday: Taco Soup, Tortilla Chips, Sourcream, Cheese, Mixed Green Salad w/fresh pears, Nuts, Brie, and a Balsamic Vinagrette
Tuesday: In-laws, I'll probably bring a dessert or side dish to contribute but haven't checked yet.
Wednesday: Chicken, Snow Pea, & Broccoli Stir-fry, Rice, Fruit Salad
Thursday: Celebration Dinner Out!
Friday: Lasagna, Homemade Breadsticks, Salad (or steamed veggies)
Saturday (Fall Inspired Dinner for 10): Chili, Cornbread, Cucumber/Onion Salad (courtesy of one of my sisters), & Another Salad (currently undecided), Homemade Applesauce, Pumpkin Cheesecake & Apple Cheesecake
Sunday: Birthday Dinner at my Parents!
No pizza night this week because I think we will be going out for pizza on Thursday. One of these weeks, I'll try to link to recipes but that will require me to type them some place else and to actually write some of them down from my head. :) So if you want any of the recipes just leave a comment. I just got my Tast of Home Oct/Nov magazine and can't wait to try all the fall recipes! Squash soup, pumkin cheesecake, carrot cream cheese muffins...
Alaina you help motivate me to keep adding to my menu cards. I have started a box of 3x5 cards that either have recipes or a meal and its needed ingredients written on it. I flip through and pick one to two weeks worth of meals before I go shopping. Since the needed ingredients are written on the card its painless to make my shopping list. Then each morning I flip through the cards I pulled out and choose (or let Steve choose) what we want for dinner. So far it has worked well for me.
I am constantly adding to my menu cards and looking for new meal ideas. I can't wait to try your lentil carrot casserole.
